In order to read the Apostolic Fathers themselves, the best place to start is probably with Michael Holmes’ excellent modern translation, The Apostolic Fathers in English, 3rd ed. (Grand Rapids, MI.: Baker, 2006). Holmes also provides brief introductions to each work.
After that, Clayton Jefford has provided the two most useful introductions: a shorter one, The Apostolic Fathers: An Essential Guide (Nashville: Abingdon, 2006),
...and a slightly longer one, Reading the Apostolic Fathers (Peabody, MA: Hendrickson, 1996).
